2. Bun cha (Grilled pork and rice noodles)

       Bun Cha is a Vietnamese dish of grilled pork (cha), rice noodles and dipping sauce, is thought to have originated from Hanoi, Vietnam. Bun cha is served with a plate of rice noodles, a bowl of grilled pork and dipping sauce and a plate of herb.

There are two kind of cha: cha vien and cha mieng. Cha vien is made from lean shoulder which is softer than ham or butt, lean shoulder will be chopped and marinated spices, then grilled. 3. Banh Cuon (Steamed rice pancake rolls)

        The ingredients to make this dish are: rice flour, pork, fried onion, minced wood ear mushroom, fish sauce and some spices.
First you should select high quality rice which is cleaned and soaked in water for several hours before being ground into batter. A thin layer of batter is poured on a cloth that is tautly stretched and placed on top of the pot which can quickly cook the rice batter. 
Locally, the chief makes “Banh cuon” with wonderful colours of chives and grated vegetables in the rolls. Banh cuon can made extremily thin because it is steamed over a babric covered a pot which can quickly cook the rice flour, keeping it moist and workable. A very thin layer of batter is poured on the cloth and evenly spead and stems paper thin, and in less than a minute, a flat bamboo stick is used to lift off the delicate rice crepe. Banh cuon is served with dipping fish sauce. The sauce is heated with sugar, vinegar, etc.

4. Banh my (Vietnamese sandwich)

          “Banh my” is one of the best food of Hanoi street food and is voted one of the best street food in the world. Banh my first appeared in the French colonial period. Then in 1954, when France leaved Vietnam, Vietnamese made banh mi in their own way and added pork, Vietnamese ham, herbs and cucumber inside the bread.

   Khu du lịch Tam Cốc - Bích Động nằm trên địa phận xã Ninh Hải, huyện Hoa Lư, tỉnh Ninh Bình thuộc quần thể Danh thắng Tràng An. Toàn khu vực bao gồm hệ thống các hang động, núi đá vôi và các di tích lịch sử. Tam Cốc còn được biết đến với những cái tên nổi tiếng như " vịnh Hạ Long trên cạn " hay " Nam thiên đệ nhị động " - Động đẹp thứ nhì ở trời Nam, là một khu du lịch trọng điểm quốc gia Việt Nam.

HANG ĐỘNG VỚI VẺ ĐẸP KÌ BÍ…

   Tam Cốc, có nghĩa là " ba hang ", gồm hang Cả, hang Hai và hang Ba. Cả ba hang đều được tạo thành bởi dòng sông Ngô Đồng đâm xuyên qua núi. Cứ đi dọc dòng sông Ngô Đồng đó quý khách sẽ lần lượt đến với 3 hang xuyên qua núi với các tên gọi khác nhau như: Hang Cả dài 127 m, xuyên qua một quả núi lớn, cửa hang rộng trên 20 m. Trong hang khí hậu khá mát và có nhiều nhũ đá rủ xuống với muôn hình vạn trạng. Tiếp tục hành trình bạn sẽ đến với Hang Hai, cách hang Cả gần 1 km, dài 60 m, trần hang có nhiều nhũ đá rủ xuống rất kỳ lạ… Cuối cùng là Hang Ba, gần hang Hai, dài 50 m, trần hang như một vòm đá, thấp hơn so với hai hang kia.



   Đi sâu vào bên trong hang Tam Cốc, bạn sẽ được chiêm ngưỡng những khối thạch nhũ từ trần hang rũ xuống lô nhô, óng ánh như những khối châu ngọc huyền  ảo. Tạo hóa quả thật kì vĩ khi kiến tạo ra những vẻ đẹp thiên nhiên theo năm tháng, làm rung động cả lòng người. Bạn sẽ không tránh khỏi sự ngỡ ngàng khi nhìn thấy những vách núi đá vôi cheo leo, với những hình thù kì lạ, sẽ làm cho chuyến đi của bạn xen lẫn nhiều cảm xúc và hấp dẫn hơn, với mong muốn được chinh phục cũng như khám phá nơi đây. Chẳng phải đây là một dự kết hợp quá kì diệu sao? Những lớp rêu xanh, những cành hoa của núi rừng trải mình lên các vách núi cheo leo để sinh tồn, nhưng cũng nhờ vậy mà làm cho sự hùng vĩ nơi đây lại ẩn trong mình một chút nên thơ, không quá cứng nhắc, không quá đáng sợ, làm cho con người ta cảm thấy nhẹ nhàng hơn.

BÍCH ĐỘNG - XUYÊN THỦY ĐỘNG

   Bích Động nằm cách bến Tam Cốc 2 km, có nghĩa là " động xanh ", là tên do tể tướng Nguyễn Nghiễm, thân phụ của đại thi hào Nguyễn Du đặt cho động năm 1773. Bích Động là một trong những danh thắng nổi tiếng nhất của Ninh Bình được mệnh danh là “ Nam Thiên đệ nhị động ” (động đẹp thứ nhì ở Trời Nam), chỉ sau động Hương Sơn. Phía trước động là dòng sông Hoàng Long uốn lượn bên sườn núi và cánh đồng Tràng Thi rợp màu xanh mát.

   Nằm trên núi Ngũ Nhạc, Chùa Bích Động được xây dựng theo kiểu chữ " Tam " Hán tự, ba toà không liền nhau, tam cấp dọc theo sườn núi, dựa vào thế núi từ thấp lên cao thành 3 ngôi chùa riêng biệt: Hạ, Trung và Thượng. Điều độc đáo của chùa Bích Động là núi, động và chùa bổ sung cho nhau, lại ẩn hiện giữa những cây đại thụ xanh biếc, làm cho chùa hoà nhập với cảnh trí thiên nhiên ngoạn mục. Chùa Hạ có 5 gian xây trên một nền cao dưới chân núi. Trong chùa thờ phật, kiến trúc chùa theo kiểu chữ Đinh. Vì kèo, xà ngang, xà dọc cũng bằng gỗ lim. Mái chùa là hai tầng mái uốn cong, gồm 8 mái. Các cột đá ở chùa hạ đều bằng đá liền một khối, không chắp nối, cao hơn 4m, làm được những cột đá thư thế quả là một kỳ công. Từ chùa Hạ bước lên 120 bậc theo đường hình chữ S tới lưng chừng dãy núi Ngũ Nhạc là chùa Trung. Ngay phía trước là hai chữ Bích Động tạc vào vách núi. Đây là một chùa rất độc đáo, ít nơi có được, một nửa gắn vào hang động, một nửa lộ thiên, chùa có 3 gian thờ Phật. Lên chùa Thượng, du khách phải bước tới gần 40 bậc đá theo sườn núi. Chùa Thượng còn gọi là chùa Đông, chùa thờ phật bà Quan Âm. Đây là ngôi chùa nằm ở vị trí cao nhất, gần đỉnh núi Bích Động.

KHÁM PHÁ CHỐN BỒNG LAI TIÊN CẢNH - ĐỘNG TIÊN

   Động này cách Bích Động gần 1km theo hướng đông nam, gồm có ba hang lớn, rộng và cao.
Trần động có nhiều vân đá, những nhũ đá rủ xuống lấp lánh nhiều màu sắc, được thiên nhiên chạm trổ vừa phóng khoáng, vừa tinh xảo mà sống động. Đứng từ bên ngoài nhìn vào, dưới ánh sáng kỳ ảo động Tiên như một lâu đài nguy nga tráng lệ trong huyền thoại. Động Tiên – nơi được mệnh danh là chốn bồng lai tiên cảnh dưới trần gian với những lớp nhũ đá tạo thành hình những Ông Tiên và Cô Tiên, những con voi, con hổ, kỳ đà đang hòa mình với tự nhiên, những cây tiền, cây thóc đang như nở hoa kết quả. Những khối đá trong động khi gõ vào sẽ tạo ra nhiều loại âm thanh rất lạ.

   Vietnam attracts tourists by not only its poetic, natural beauty but also unique culture and friendly people. In October 2015, director Jordan Vogt-Roberts came to Vietnam and spent about 1 month to travel across the country to inspect feasible sites for the blockbuster Kong: Skull Island. Jordan Vogt-Roberts says: :”I can not help being in awe of the country and determine to render Vietnam on the screen the same way New Zealand I used as a backdrop for the Lord of the Rings films. Then he chose Tam Coc, Trang An and Van Long natural reserve in Ninh Binh; Tu Lan cave system and Phong Nha cave in Quang Binh; Ha Long Bay to record for his film.



   Let’s explore why director Jordan Vogt-Roberts chose those places in Vietnam for his film with Vietnam Eco Travel !





11, Tràng An



   Trang An is a scenic area in Ninh Binh, Vietnam renowned for its boat cave tours. On 23 June 2014, at the 38th session of the World Heritage Committee in Doha, the Trang AnScenic Landscape Complex was inscribed as a UNESCO World Heritage Site. Surrounded by mountains, Trang An has another name is “ Ha Long Bay on Land ” because the scenery is as beautiful as Ha Long except the sea. Join in boat trip in Trang An to see natural and amazing scenery of this landscape with a lot of magical caves such as Sang Cave (Light Cave), Toi Cave (Dark cave), Nau Ruou Cave (Cooking Rice Wine cave) with green river that you also can see the bottom of it. You will understand why it is considered as " Halong Bay on Land ".




2, Tam Cốc


   Tam Cốc is situated in Van Lam village, Hoa Lu district, Ninh Binh province. Recognized as a special national heritage, Tam Coc is often called ‘ Ha Long Bay on the land ’ for its system of limestone grottoes and historical relics from the Tran dynasty in the 13th and 14th century.



   Tam Coc , literally "three caves", consists of three natural caves — Hang Ca, Hang Hai, and Hang Ba. To reach Tam Coc, you must board a small boat at the wharf and get rowed up the sinuous Ngo Dong River pass Xuyen Thuy cave and pockets of rice fields. Tam Coc is charmingly beautiful in any season. In spring, bright green rice fields spread along the river banks, turning into silky yellow beds in the fourth lunar month. In the summer while traveling on the Ngo Dong River, visitors will enjoy an enticing lotus fragrance while listening to the locals recounting legends about each cliff or mountain in the shape of a tortoise or dragon head.


3, Van Long Nature Resever 


   Located in Gia Vien district, Ninh Binh. Van Long Natural Reserve , known as the “ Preserved Nature Area” of  Ninh Binh, offers wonderful views of landscapes and rural life. Compared to Tam Coc and Trang An which are more popular tourist attractions, Van Long is much more primitive and completely untouched.



   Rivers, mountains, grottoes, rice paddies, old houses, friendly locals, tiny – bamboo boat riding,etc all contribute to make Van Long to be a must see attraction for travelers. Tourists who come to admire the reserve will have the opportunity to view rich flora and fauna, particularly the rarely – seen silver langur, within the most bio – diversified wetland in Vietnam, according to international and national research findings.



   Not only is the nature reserve, Van Long wetland is a place with attractive landscape. Van Long is known as “the bay without wave” because when going on a boat, visitors will see a flat surface like a big mirror. Watercolor painting is reflected by the strong sculpt of limestone: Meo Cao Mountain, Mam Xoi Mountain, Hom Sach Mountain, Da Ban Mountain, Nghien Mountain, Mo Coi Mountain, Co Tien Mountain…

4, Tu Lan Cave System


   Tu Lan cave system is located in Phong Nha – Ke Bang National Park which has been a world cultural organization UNESCO as a world natural heritage. There are many beautiful caves in this limestone mountain are with stalagmites and stalactites. It also has underground rivers and waterfuls. Tu Lan Cave System includes over 10 caves which were originally discovered and explored in 1992 and some of them were just found in the past some year recently. Visiting Tu Lan Cave Systems, travelers will have to trek through remote jungle, cross through buffalo fields, be surrounded by limestone mountains on all sides and plunge into underground rivers that wind through mountains and river valleys alike.




5, Ha Long Bay


   Ha Long Bay is a UNESCO World Heritage Site and popular travel destination in Quang Ninh province. It is famous for its scenic ocean karts tophography and pristine natural beauty.There are about 1969 limestone rising  from the sea and several large caves located within the island. The biggest cave in Ha Long Bay is “ Dau Go ” cave (Wooden head cave) and some other magical caves such as Thien Cung cave (Paradise cave), Sung Sot cave (surprising cave), etc.
